A sourdough neo-pizzeria under the barrel-vaulted roof that gives it its name — bottē is Italian for 'barrel' — on Main Road in the heart of Hudson village. The dough is a three-day ritual: a 130-year-old sourdough starter, organic '00' flour and natural mineral water, 72 hours of fermentation, hand-stretched to order. No microwave, no fryer in the kitchen; gluten-free crusts get their own dedicated oven. The counter pours the largest selection of Le Castor (Rigaud) organic beer on tap anywhere — and counter service is deliberate, the house's way of giving village kids a first job.
