État Major has anchored the corner of Ontario and Jeanne-d'Arc since 2013, the original room from restaurateur Vincent Châtelais's small Hochelaga group (which also runs Motel Ontario, Le Quartier général, and the two Heirloom pizzerias — distinct concepts, not a repeated banner). Chef Chrystel Tremblay keeps a market-driven, French-inspired menu in weekly motion — Gaspor suckling pig, foie gras torchon, beef gravlax, veal chop — served bring-your-own-wine in a bright, understated dining room. A five-course table d'hôte runs alongside the à la carte menu.
