Sabayon is Patrice Demers and Marie-Josée Beaudoin's 16-seat micro-restaurant in Pointe-Saint-Charles, opened in August 2023 as Demers' return to savoury cooking after years as one of Quebec's best-known pastry chefs. The tasting menu leans on Québec terroir and market producers, vegetable- and fruit-forward especially in summer, built around a signature course of wood-fire grilled mushrooms with a crisp arlette and a bay leaf-and-juniper sabayon. It earned a Michelin Star in the guide's first Québec edition (May 2025), with dinner service Thursday to Saturday and a Friday-Saturday tea time — a tiny, hard-to-book room, but a genuinely local one rather than a tourist destination, built by two Montrealers cooking for their own neighbourhood.
