Sabayon

2194 Rue Centre

On our map. We haven't walked through the door yet — here's why it's on the list.

Fourteen-seat micro-restaurant that opened in August 2023 on Rue Centre, run by Patrice Demers and Marie-Josée Beaudoin — he in the kitchen, she on the floor. A single tasting menu runs Thursday through Saturday at 7 p.m.: four savoury courses and two sweet, changing weekly with the market, plus a weekend tea service.

The signature dish — wood-fire-grilled mushrooms with a crisp arlette and a bay leaf-and-juniper sabayon — earned the restaurant a star in Quebec's inaugural Michelin Guide in spring 2025, a star it retained in 2026.
