Opened in October 2025 on Rue Saint-Paul Ouest, at the front of a boutique hotel, Buvette Pastek is run by Thomas Vernis, also behind Santos and Unibar, with a wine list from Philippe Champagne and interiors by Maison Charlotte.

Chef Pat Marion's market-driven cooking swings from lighter, vegetable-forward lunch dishes to heartier evening plates, set in an unfussy, Parisian-leaning room beneath the high ceilings of an old building.
