Founded in June 1993 on Rue Saint-Denis by chef Normand Laprise and Christine Lamarche, Toqué! pioneered a market-driven cuisine built on local producers and ingredient traceability — a philosophy that shaped Quebec gastronomy. The restaurant relocated in 2004 to Place Jean-Paul-Riopelle, inside the Centre CDP Capital.

Now a benchmark address, Toqué! is among the restaurants recommended in the inaugural Michelin Guide Québec, unveiled in spring 2025.
