Opened in December 2025 on Notre-Dame West by William Charbonneau (Joe Beef), Camille Desmarais-Plouffe (Liverpool House), chef Scott Love (Mui Mui) and operations director Jean-Philippe Faille (Liverpool House), Bruce is a tribute to Charbonneau's Scottish mother, Barbara Bruce. The kitchen leans on haggis, Cullen skink, breaded black pudding and cranachan.

The wine list, artisanal and natural despite the Scottish-tavern decor, is Faille's work; Tastet calls it "a refreshing and confident new presence" on the Montreal scene.
