Opened in 2015 between Griffintown and the Old Port, Jellyfish is led by executive chef Mathieu Masson-Duceppe, an ITHQ graduate who worked at Mundo Trattoria and Moishes and won an episode of Chopped Canada the same year. Restaurateur Francis Rodrigue, with 22 restaurants to his name, and Roberto Pesut round out the ownership trio.

The "crudo + charbon" concept sets raw freshness — oysters, tataki, tartare, sashimi, carpaccio — against charcoal-grilled dishes, in a glamorous room ranked among Montreal's top tables.
