On our map. We haven't walked through the door yet — here's why it's on the list.
A specialty café on Chabot, with house viennoiseries and midday meals, opened by Guillaume Lavoisier and Anthony Blanc, two of seven owners, already behind the bakery Brioche à Tête and Café Saint-Louis in 2019.
They set up on Chabot partly because their pastry production workshop was already there. The fit-out was done with the cabinetmakers at L'Autre Atelier and Appareil Architecture. The lunch menu changes with the seasons, with pop-up menus built alongside guest chefs, and the baguettes come from the Fanfare bakery.
Café Maison Chabot is on the Regulars map — noted, not yet visited. Our guides are written on foot, door by door, and nobody pays to be in them. Whether the house takes part in Regulars is still to be confirmed. No points, no coupons — standing is earned.
