A Spanish-minded wine bar on Duluth Est, opened by chef Georges Greiche and sommelier Patrick Oakes, both of whom came through Joe Beef. The house writes that Georges created it to show, with pride and respect, the beauty, tradition and honesty of Spanish gastronomy.
Greiche trained at the Culinary Institute of America and worked at Blackberry Farm, Pilgrimme and Joe Beef before spending months in Spain documenting the regional cooking that gives the menu its shape. The card holds a tortilla de patatas with smoked paprika, hand-sliced jamón ibérico, croquetas, and calamari served on a St-Viateur bagel.
