Created by Mélanie Blanchette and François Nadon, the duo behind Bouillon Bilk and Cadet, Place Carmin occupies Rue William's former Le Local space, with executive chef Émile Colette joining as a new partner.

The menu reworks the classic French brasserie: foie gras terrine, duck à l'orange, a house-specialty blood pudding tatin, maple crème brûlée, and a sea buckthorn Paris-Brest. The skylit, earth-toned dining room is among the addresses in the inaugural Michelin Guide Québec, spring 2025.
